Disneyland, Vegan-Style

Sorry to miss a couple days of posting -- I was busy enjoying DISNEYLAND!

On Thursday morning I drove to Anaheim to meet my aunt, her husband, and my cousin for some Disney fun. We went to both parks - the Magic Kingdom and California Adventure. We went on the rollercoaster and the Tower of Terror a few times in a row, getting a Fastpass as well as waiting in line.

My cousin and I were making our constipated faces. After a while we just made silly faces for each picture.

For lunch on Thursday we went to the Italian restaurant and wine bar on the California Adventure side, where we all happened to get something vegan! My aunt and her husband ordered pasta with broccoli and my cousin got pasta with tomatoes. I got the vegetable salad, which came with lots of grilled veggies, including eggplant and zucchini, and I got the fig balsamic dressing on the side.

It was really delicious!

For dinner that night we ate at the Hyatt restaurant, and I got the veggie burger with onions, mushrooms, mustard, and BBQ sauce (didn't eat the bun) and veggie soup. I didn't take a picture but it was really good.

I spent the night at the hotel and then we went back to Disneyland on Friday. It was cold (in the 50's) and raining so the parks were not very crowded. For lunch I got the famous vegetarian gumbo (it's vegan, don't worry) sold at a little stand in the New Orleans section of the Magic Kingdom.

Oh my dear lord this was amazing. If you go to Disneyland, you MUST eat this. I didn't eat all the bread bowl but it was sourdough and really tasty. And the gumbo itself... wow. It was the kind of meal that made me happy all day long because I kept thinking, "Man, that was tasty!"

For dinner we ate at the hotel again, and I had pretty much the same meal as the night before, but with salad instead of soup.

Overall I was very impressed with Disneyland's vegan offerings. I ate very well, while still staying healthy. I also saw quite a bit of fresh fruit for sale at stands around the park. Yes, there's plenty of crap to be found, but I think Disneyland is making an effort to offer healthy and vegan food and it's very much appreciated.

I had a GREAT time at Disneyland. It was extremely fun. I've been to Disney World several times, and it is way bigger but Disneyland is nice and feels a little less overwhelming than Disney World can. It's a nice day trip for any LA residents (and we get a discount).

Deconstructed Moong Bean Soup

I am really proud of my recipe today, even though it is incredibly simple. I am sure other people have done this before, but I feel like I invented it. So I'll just continue to pretend I did.

I finished off my big bag of moong beans.

I started out by making some moong bean soup with dry beans, frozen corn and artichoke hearts, kale stalks, carrots, and garam masala, kind of based off my Indian-Spiced Yellow Split Pea Soup.

Then after I ate it all, I wished I could make more but I was out of most of the ingredients. So I created this super-awesome recipe that I shall call "deconstructed soup."

Deconstructed Moong Bean Soup

Dried moong beans
Seasoned salt
Optional -- garlic, curry powder, garam masala

Raw spinach
Raw broccoli and cauliflower

Nutritional yeast

Cook moong beans until soft, about an hour. Cook longer than you think you should -- they'll get cooked, but then add more water and keep cooking so they really break down and get creamy.

Make a bed of spinach and raw broccoli and cauliflower. Spoon some hot soup on top and sprinkle nutritional yeast.

I actually watered down the soup when I took this picture but I liked it better when it was thicker. I also tried it with cold soup but it tastes better when the soup is hot.

In other news, I cleaned my apartment today and my room is so clean it's weird. Then I went to dinner with my relatives and... they invited me to go to Disneyland with them! I'm so excited! They got a kid's suite with bunk beds and I'm going to stay in the hotel with them on Thursday night and have a sleepover with my 14-year-old cousin. It has been a while since I had a sleepover and I am psyched. heeheehehehehehehehe

Also, I have a cool new raw snack in the dehydrator right now that I'll be bringing with me to Disney and I'll post about soon.

ABC's of Me, M Cafe Salads

Today was really fun. I Skyped with my mom in the morning and in the afternoon met my aunt, her husband, and my cousin at the Beverly Center, LA's fanciest mall. I actually hadn't been there before, so it was fun to just walk around and look at stuff. We went to the Beverly Hills M Cafe for dinner and it was great! I snapped some crappy cell phone pics of my dinner -- curry tempeh salad, maple roasted veggies, and celery root remoulade. It was all absolutely amazing and filling enough that I brought back at least a third of it.

I also tried my aunt's Bi Bim Bap, which she used to eat when she lived in Korea. It was amazing and I might get that next time I go to M Cafe.

Dancing, Dinner with Relatives, Pacific Park

I had a busy weekend!

On Friday I Skyped with my mom for three hours (yes, really), went to acting class, saw an improv show with a friend, and then busted out the big jewelry for a night of really insane dancing. Before I left my apartment I took a photo with terrible terrible lighting -- I was in a hurry and just took a really quick picture. So I had fun in iPhoto, used every filter possible, and turned it into this:

I had multiple dance-offs and got insanely sweaty (and took off my long-sleeve shirt in the bathroom). I even had multiple people come up to me and tell me how much they liked my dancing. And even though I pretend it's because I have mad skills, I wasn't break-dancing or anything. Just being ridiculously confident (while completely sober BTW). Yes, this is a good reason why I'll be single forever and I sometimes embarrass the people around me, but at least it was fun.

On Saturday I helped a friend of mine cast a short film she wrote and is directing. Wow, what a great experience. It was fascinating to see the whole process from the other side and get to watch other actors audition. And I was amazed at how many people didn't fulfill their basic professional responsibilities -- bring your headshot and resume, be polite. I also saw that personality really matters. There was one guy who was a good actor, and he was playing a "bad guy," but he seemed like such an asshole in real life that we instantly knew we wouldn't want to work with him. I have a role in the film, shooting next Saturday, so I'll get to see how it all plays out.

After casting I drove out to Seed in Venice to meet my aunt, cousin, and aunt's new husband. I hadn't seen them in six years! It's crazy because my cousin went from an 8-year-old kid to a 14-year-old teenager. What a huge change that is. And I am pretty much the same person I was last time she saw me.

I've written about Seed one other time - it's a macrobiotic vegan restaurant. Last time I got the Saisai Donburi Macro Bowl with brown rice, kale, sea veggies, beans, and bean sprouts. This time I got the mango bowl, which I didn't take a picture of, so I'll just leave you with the picture from last time:

My dinner companions are not vegans but they really liked what they ordered. After dinner, we watched the movie Never Let Me Go in their hotel room. I will have to write about that movie soon because it was amazing, in a depressing sort of way.

Today I met up with them again in Santa Monica. We walked along the beach, enjoying the sunny day, and attempted to use the beach gym equipment.

My aunt is almost 48 and is in much better shape than I have ever been.

We also rode the roller coaster and "sea monster" ride in Pacific Park. It was touristy and super fun.

I was going to do the "ABC's of me" thing I've been seeing on some other blogs but this post has gotten so long that I'll just delay it until tomorrow.

Gimme Your Sweet Hot Mustard Lovin'

Thanks for all the feedback on my new headshots. I'm going to try using this one for a while and see how it works:

Yesterday I had a very intense improv in acting class -- this other guy was playing my ex-boyfriend and I had to come over and tell him I was pregnant... but it might not be his! Dum dum dum. I got really stressed while doing the scene just because I was so into it and my teacher said that it was some of the best work he's seen me do.

Last night I had my first cast meeting for a new sketch comedy troupe based on the website It's going to be like the first few seasons of SNL (irreverent and raunchy) and I'm getting into the Screen Actors Guild because of it! Yay! If you're not familiar with the acting business, then you probably don't know much about the acting unions (and have no interest) but let's suffice to say, it's difficult to get in and I'm very excited to qualify.

After the meeting I went to the bar Three Clubs with everyone to get to know the cast. After the bar, I headed to the restaurant Kitchen 24 with a few guys from the troupe. I didn't get anything to eat but just hung out and talked. I haven't had many guy friends since I moved to LA, so it was fun to hang out with dudes. I've always been friends with lots of guys and generally enjoyed spending time with guys better. I also hung out with my brother a lot and I miss that!

But now, I promised you a condiment and I will live up to that. I love mustard. I love all kinds of mustard, and I always have. If you saw my dad's fridge, you'd know it's genetic -- he has at least ten kinds of mustard in there at all times. Averie posted a couple times about Ralphs Sweet Hot Mustard and I was intrigued, but unfortunately, most hot sweet mustard has honey in it. But when it caught my eye (on sale!) at Ralphs the other day, I checked it out and realized that it's totally vegan, and doesn't have high-fructose corn syrup, either.

This stuff is barely sweet but it is definitely hot. I love it.

The hottest mustard I ever had was in Ireland -- I got a sandwich in a bar with mustard on it and it was so spicy I actually cried a little. I told the waiter about it and he replied with a smile, "I know, it's lovely, isn't it?"

I ate some sprout salad with alfalfa sprouts, this mustard, and TJ's gyoza sauce. I also want to use it to make some sauce for zucchini pasta. Last night I used it on salad:

Butter lettuce, green hummus, sweet hot mustard, and salsa. (Don't worry, this isn't all I had for dinner -- I also had a veggie burger and spinach with nutritional yeast).

So, do you like mustard? Or are you a ketchup girl? BBQ lover? Don't like condiments? I love all of the above!

Do you tend to get along better with girls or guys? I've found that my friends have usually been guys or other girls who also get along with guys. There are a couple exceptions, though, and I wouldn't give up those lady friends for anything. =)

New Headshots

I had an audition today then drove across town to pick up the CD of pictures from my headshot session last Friday. Then I Skyped with my mom and went through the 130 pictures over and over, narrowing down and trying to pick a good one. Picking a headshot is really difficult because it's tempting to just find the prettiest picture of yourself, but that isn't what a headshot is all about. A headshot is a marketing tool, so you need a picture that looks like you and shows what type of characters you play. I play rebellious teenagers, so that's what I need to come across.

After looking at pictures of myself for so long, I feel like I have the dumbest face in the world. It's like I have an allergy to making normal facial expressions.

It's a lovely picture, but I was told that it made me look older and didn't show my personality, and that's why I took some others. But everyone has a different opinion and it's so hard to figure out what's right! I wish I could just use this picture instead:

Blaughh it's hard to look at pictures of yourself for so long and not think mean things about yourself. Does anyone else feel this way?

But I do have some GOOD NEWS! My brother is coming to visit me over spring break! He and his girlfriend are coming to LA for the first time and are going to stay with me. Yayyayayay!

Okey dokes, that's my boring, self-serving post for the day. Tomorrow I'm going to talk about a new condiment. =O hahahah I am easy to please.

Golden Beets and Apples

This is my 171st post, which makes this blog equal in number with the blog I kept while I lived in China. Just something random I noticed today.

My weekend was pretty low-key. Yesterday I had a workshop and acting class, and last night I hung out with some friends in Hollywood. Today I slept in, relaxed, cleaned my room, and caught up on some reading. Chill to the max.

I have an amazing recipe to share today. It's so good, it might just blow your mind.

Golden Beets and Apples

4 golden beets
2 small baking apples (I used a cameo and a pink lady)
1 yellow onion
1 tbsp mustard
1 tbsp apple cider vinegar
1 tbsp gyoza dipping sauce (sub with Asian marinade or smaller amount of soy sauce)
1 tbsp raspberry vinaigrette dressing
1 tsp dried basil

Peel and cut beets. Cut apples and onions into large pieces. Mix together dressing ingredients to taste, thin with a little water if necessary, and coat veggies. Cook in a casserole dish at 350 for 30 minutes, 425 for 15 minutes, and 500 for 15 minutes (don't preheat every time, just turn the temperature up and mix the veggies each time). This slow-roasts the veggies while getting them nice and caramelized. Serve hot or cold.

This recipe is seriously amazing. I ate the whole thing in one day.

Mini Movie Reviews:
I finally saw The Social Network! It really is great and I see now why it's getting so much Oscar buzz. And Andrew Garfield, who plays Eduardo Saverin, is incredible. He'll be playing the new iteration of Spiderman. I hadn't been too excited about that, but now I'm totally sold. I will go out of my way to see Andrew Garfield in the future. And I still have Erica Albright's speech from the beginning of the movie ringing in my ears.

I also saw Into the Wild, based on Jon Krakauer's book that I had to read in English class in high school. I'm feeling kind of haunted by this movie even a couple days later. Emile Hirsch is fantastic and Kristen Stewart has a small role and plays it perfectly. Her specialty is definitely "longing." She's most well-known for Twilight, obviously, but in both Into the Wild and Adventureland she plays a girl who wants someone she can't really have and she's great at that tortured feeling.

Oh, Happy Valentine's Day, if that means anything to you! It really doesn't to me, but my mom would always give us chocolates for Valentine's Day so I will think of those sweet memories. =) Valentine's Day always seemed like random chocolate and reminders from Mom of how much she loves us Day. Easter was like that, too, but with the added bonus of the (plastic) easter egg hunt. So Happy Valentine's Day, Mom! I love you!

Green Hummus

I got new headshots taken today, and I was going to do a Fashion Friday based off them but I found out I won't get the photos until Monday so I'll just postpone and do a recipe post instead!

It's a big day in Egypt -- Hosni Mubarak stepped down! Now we'll see how much change actually happens and how democratic the military will be. If you're interested in a "Cliff's Notes" version of the Egyptian revolution (like Lynn said in her comment), check out my blog post!

I've been eating very high raw the past few days, with tons of green smoothies and some salads. For something new I made a half-raw hummus. I like zucchini hummus but raw chickpeas are gross so I cooked the chickpeas. I will warn you, though -- this hummus does taste "green." It's healthy-tasting, not oily and restaurant-y.

Green Hummus

1/2 cup chickpeas
2 small zucchini, sliced
2 tsp garlic
5 sundried tomatoes
1/2 raw tomato
1/2 tsp spirulina
2 tbsp lemon juice
1/2 tsp paprika
1/4 tsp seasoned salt
1 tsp onion flakes

Process chickpeas and zucchini, add seasonings to flavor. Add tahini if you wish. Don't skip the lemon juice, it really makes it!

Use as a dip for raw veggies or eat on salad. I mixed some with salsa and used it as a salad dressing.

Besides the hummus it's been lots of green smoothies with tons of kale, frozen berries and mango, spirulina, cinnamon, and fresh strawberries. There was a "Valentine's Sale" on fresh strawberries at Ralphs and I got a couple packages for $2.50 each. You can throw entire strawberries in, tops and all. Just blend well!

Tonight I'm going to a Hollywood Hoosiers event at a bar and tomorrow I have a workshop and acting class. Have a good weekend!

It's an Exciting Time in Egypt

We're in for a little change of pace today -- this post is about the recent revolutionary uprisings in Egypt. If you're not interested, feel free to skip this post, but I hope I can shed a little light on the subject as well as share my opinions. I'll also share some links throughout that I hope will be helpful in giving you a decent overview and balanced perspective of the recent events if you're feeling a little behind.

I was a Political Science, International Studies, and World Languages triple major in college, and one of the languages I studied was Arabic. I considered studying abroad in Cairo before I picked Beijing instead, but the Middle East has still been an area of great interest to me. Plus, my best friend's family is from Algeria, which gave me a personal connection to the region.

The story of the recent uprisings really starts decades ago, but for simplicity's sake, we'll say it started with Mohamed Bouazizi's self-immolation in December. Bouazizi, a young Tunisian fruit vendor, set himself on fire out of desperation, tortured by the endless cycle of poverty and loss of dignity the young population of Tunisia has been stuck in. His act (crazy, terrifying, and sad as it was) sparked such a furor that lead to weeks of riots that actually forced out the autocratic ruler of Tunisia, Zine al-Abidine Ben-Ali, after 23 years of control.
Note: Self-immolation is not a Muslim practice. It is a political protest and suicide is actually against the teachings of Islam.
Now, here's what's crazy about this revolution -- An autocratic leader was toppled in a matter of weeks by a mass movement without a clear leadership. Young people stayed in contact through Facebook, Twitter, and kept up with news through Al-Jazeera online.

Hosni Mubarak
Inspired by the revolution in Tunisia, the majority of the protests in Egypt right now are focused on removing Hosni Mubarak from power, who has been the president for almost 30 years. He "won" re-election with 80% of the vote last election cycle -- from manipulation and corruption, of course. In response to the protests, Mubarak has pledged not to run again in the fall. But that isn't enough for many protesters, who want to see him removed from power immediately.

Power Vacuum
We know that nature abhors a vacuum. When a leader is toppled, who takes their place? One huge problem in Tunisia and Egypt is that the autocratic leaders squashed opposition so successfully that there aren't opposition parties and leaders ready to step in. There isn't even an infrastructure in place to hold real, unbiased elections. Some politicians who were already members of the government are trying to gain power, but most citizens don't want to see members of the old regime (like Vice President Suleiman) continuing to hold power.

The military will be an important force, and right now they're staying out of the fray and neither supporting Mubarak nor ousting him by force. Militaries often step in to keep order during times of governmental transition, but problems arise when soldiers become police officers. Nobody wants a military state.

Religious Groups
Egyptian protesters are saying that this revolution is NOT about religion, and that's true. However, that doesn't mean that religious groups won't try to take advantage of the chaos. Currently, the Muslim Brotherhood (an important opposition party in Egypt that has been rendered toothless by Mubarak) is not taking a very active role, because they want the protests to be secular and to come across as a moderate party, in hopes of increasing their electoral chances later on.

American Response
The United States is in a tricky spot. First of all, Mubarak has long been an American ally. And the U.S. has been burned by supporting revolution before, such as when we revoked support for the Shah of Iran, only to see him replaced by a fundamentalist, Anti-American government that was hardly more democratic (as I'm sure you know from the election debacle of two years ago). Obama is walking a fine line, trying to get Mubarak to step aside, without pushing him too far and inciting him to clamp down and fight the protesters with violence. The Obama Administration is leaning towards an "orderly transition" facilitated by Vice President Suleiman, even though Press Secretary Robert Gibbs has made it clear that Suleiman is not an ideal reformer (for example, he's made comments about Egypt not being ready for democracy). Our Mideast allies, including Israel, are urging the U.S. not to support immediate transition for worries of destabilizing their countries.

What's Next?
Ah, that's the question.

A (relatively) leaderless revolution is scary and exciting at the same time. It's exciting because it represents the people taking control of their own government, potentially leading to liberal democracy in the Middle East. But it's scary because it can lead to instability and various groups and people will vie for power, some of whom will be quite hostile to American interests (as well as the best interests of the Egyptians). People can't live in anarchy and chaos, and eventually, they'll look for a system that can create order. With the long-standing authoritarian governments gone, religious groups are the most well-organized (think of the Taliban in Afghanistan imposing order after the Soviets pulled out, America didn't step up, and there was a power vacuum that needed to be filled). There's also the issue of burnout. Ordinary people who are the backbone of the revolt can eventually lose steam. They can't take off work (if they have it) every day to go protest. That loss of momentum is exactly what Mubarak is hoping for. But Mubarak is only the beginning -- once he's gone, a real challenge remains in reforming Egypt's political system.

I think a clear lesson here is that the United States must stop supporting undemocratic leaders just because they ally themselves with American interests. If democracy is an American interest, as we claim it is, we can't support authoritarian leaders. And yet we will continue to do so, because we want to maintain stability in tumultuous parts of the world as well as nurture good relations with important trade partners (like China and OPEC countries). But as soon as those governments are challenged by democracy, we're stuck in a terrible position. We saw it multiple times during the Cold War in South America and the Middle East.

I heard Mike Huckabee say the other day that this revolution in Egypt is "frightening." That's such a sad way to look at it. We shouldn't be frightened by people wanting to control their own governments and lives. We should carefully consider our policies and yes, there may be a ripple effect through other non-democratic Arab countries, but we should celebrate the basic idea that citizens deserve to rule themselves. Muslims, too. They don't need to be kept in check by authoritarian governments. We can't say that people should be allowed to govern themselves in democracy unless they are wont to elect leaders we disagree with.

Man, there's so much to talk about. I could definitely keep going. There's more to discuss about the nature of the protests, the political climate and culture of Egypt, the potential ripple effect throughout the Middle East, and America's foreign policy options and who is advocating what positions to take (not to mention the fundamental differences between liberal internationalism, realism, and neo-conservatism... which are fascinating).

Smoothie to Go

I knew I was going to be gone for most of the day today so I made myself a big smoothie to serve as breakfast/lunch. I worked out in the morning and then (after showering, etc.) headed to Power Group from 12:30 to 2:30 -- that's my monthly meeting at The Actors Network where we go over our career accomplishments for the past month and goals for the next month. I drank part one of my smoothie on the way there and part two afterwards. I had an audition at 4:30 for a short film. It went well! I felt good about it.

The smoothie has:
5 kale stalks and about 1 cup kale
1 cup frozen mango chunks
1 cup frozen strawberries
1/3 cup frozen blueberries
1/3 cup frozen cranberries
1 tsp cinnamon
1 tsp spirulina
Maybe 3 cups of water?

It was still pretty thick even though I felt like I added a ton of water.

Tip: If you have a low-powered blender or you just want blending to go a little faster, prep your smoothie first thing, then go get ready. Come back and blend it right before you eat breakfast or take it to go. That way your frozen fruit will have thawed enough to make it blend easily.

Merry Superbowl; On Being a Weirdo Magnet

On Friday I went to acting class and in the evening I hung out with a new actor friend at her apartment in Santa Monica. It was really fun and we had some real girl time. We ordered Italian food from Rosti, a nearby restaurant that has an entire vegan menu. I ordered the roasted vegetable salad for pickup but once we got back I realized... they put cheese on it! I was very sad so I called them and they apologized and send a delivery guy with another one for free. I tipped him but besides that it didn't cramp my evening.

On Saturday I went to acting class again (fourth time this week!) and in the evening went out to a bar with my friends, where I got hit on by all the weirdest dudes there. And exclusively the weirdest dudes. I am totally a weirdo magnet, and I have no idea why. First, a man who appeared to be homeless asked me to dance (I politely declined). Later, a Hungarian wearing a suit (in a sports bar, mind you) attempted to twirl me around and talked to me until I managed to escape. Someone tries to twirl me around every time I dance at a bar. I don't know how to swingdance, ballroom dance, or tango and I don't know why it looks like I do. Lastly was a guy who appeared to be about 35 and hit on me despite saying he thought I was probably there with a fake ID. He was a "jazz hands" kind of actor and tried to impress me with the fact that he's a recurring extra on House (not impressive in the slightest) and gave me a lecture on acting. At least he told me several times that I'm pretty. And at last call, one guy who had been sitting near me came by and gave me a fist bump and told me he loved my personality. I'm assuming that's because he saw me dancing like a crazy person. I'm not including him in the weirdos, though, that's just incidental. I like compliments. =)

Am I a weirdo magnet, or do weirdos talk to everyone? And how come normal guys never hit on me? I have not been asked on a date... pretty much ever. Every guy I've ever dated, I first approached.

Today I slept in late and worked out while catching up with the Daily Show and Colbert Report, then headed to my friends' house for the Superbowl. It was definitely a Pittsburgh crowd and Antwaan Randle El played for IU so I rooted for the Steelers. Sad.

My friends are so awesome because they always have vegan food. I ate broccoli, carrots, hummus, and guacamole.

And I had a cole slaw salad with rice wine vinegar that they made, making sure to keep it vegan. So nice. It did have oil, which I don't normally eat, but they were so nice to make it so I dealt.

Their 3-year-old daughter played in her new inflatable bouncy house that was her Christmas present. I had to take a picture. How cool is this thing?

After the Superbowl, Glee, and a couple hours of debating the future of the entertainment industry and the actors' unions, I went home. My lovely hosts packed me a bag of food that they insisted I take because my friend's dad is visiting and apparently loves grocery shopping and buys everything in triplicate. At least I brought them some chocolate peanut butter Newman-O's in trade.

Tomorrow I'm going to my Power Group at The Actors Network and then I have an audition!

I have some good posts coming up this week that I'm excited about -- a couple good recipes, plus I'm going to write about the Egypt situation and the recent movements in Congress trying to redefine rape and cut funding for Planned Parenthood. It's gonna get controversial up in hurr.

Fashion Friday: My Gray True Religion Jeans

Outfit post today!

I wore this last night to a workshop with an agent. And while I was waiting to go in the room, a very pretty girl told me she loved my style. What a great compliment! The agent meeting went really well, and she totally "got me" as an actor. Plus, she said she would have believed I was actually 16 or 17, which I like to hear.

Except I learned... don't wear jeans tucked into boots if there's any chance you might be going to a bar and dancing. I was so hot I felt like I was ready to go skiing.

Today I'm going to acting class and then seeing a friend's band play at the Roxy tonight. Tomorrow is acting class again, and Sunday I'm going to a Superbowl party.
